HONG KONG: Skip the pasta! And other unsavoury truths about airplane food
If you need one golden strategy for ordering your in-flight meal, it’s this: always order the stew. If the stew’s not available, go for fried rice and fatty fish. Pasta, noodles, chicken breast or anything deep-fried does not fare so well in the harsh conditions of the aircraft galley. These recommendations come straight from the people tasked with making the millions of meals served in-flight every day, such as Fritz Gross, director of culinary excellence at LSG Sky Chefs Asia Pacific. As the guy in charge of LSG Sky Chefs’ Hong Kong operation, which churns out 30,000 meals daily for airlines such as DragonAir, United Airlines and British Airways, Gross’ challenge is a tough one: serve hundreds of people quality meals, but do so with no knives, no crème brûlée blow torches (or indeed any fancy equipment) and with no fresh ingredients at the point of service. The result -- Gross’ kitchen is run more like a factory than a restaurant, and his biggest worry has nothing to do with how good the food tastes.
Not compulsory to display Halal logo: Jakim
Operators of eateries are not compelled to apply for the "Halal" certification so as to display the Halal logo at their premises, according to Hakimah Mohd Yusoff, director of the Halal Hub Division in the Department of Islamic Development (Jakim). Eateries displaying the Halal logo should be able to show proof of the Halal certification issued by Jakim or the Islamic Religious Council or the state Islamic religious councils, she said.

MALAYSIA: Stringent Halal Certification Process to Ensure Integrity
The Halal certification process takes six months to one year because many steps and tests are needed to be done, said Minister of International Trade and Industry (MITI) Datuk Seri Mustapa Mohamed. "To ensure the product is Halal, we have to be very precise in analysing the details. Other factors involved are time constraints, financial and the lack of manpower," he told a press conference. Mustapa said there are requests made by the foreign traders to simplify the process and reduce the duration by skipping some of the tests.
